Box 1130 Oshkosh, VVI54903-1130 ~ 10- b1 JUL 2 1 2006 DEPARTMENT OF COi'IlMUNITY DEVELOPMENT Attn: Paul VV olf Dear Paul, As per our telephone conversation today, this letter is to request an exemption for the grease trap requirement for our new Cafe addition to Harry's Bookstore. The majority of the Cafe business will be specialty coffee drinks, i.e. Espresso, Cappuccino and Latte. These drinks will be made to order and served in to-go cups. Other coffee will consist of our daily brew, which will be served black and customers will add their own sugar and creamer. VV e will also offer blended fruit drinks. These consist of a packaged fruit concentrate, which will be measured into a blender with ice. These are also made to order. Food items will consist of ready-made bakery items, i.e. cookies, danish, bagels, muffins, brownies and bars. VVe plan to offer some ready-made deli type salads, which we will dish up into individual containers. Caesar salad will be assembled daily from pre- measured and/or pre-cut ingredients. VVraps will be made from prepared ingredients that we will assemble daily. All meats and cheese will be ordered sliced. VVe may also put together a small '-/eggie & dip tray and fruit cup w/dip. These too will be made from ingredients ready to assemble. VV e see our business as mostly a to-go establishment and have planned our menu to be "portable". Everything will be served on or in disposable containers. The only dishwashing we will need to do will be our coffee thermoses, coffee brewing related items, blenders and any serving utensils used when preparing our individual portions for the day. I am still finalizing my menu for print, but have included a photocopy ofthe draft copy.
